Makes enough for 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Drink (yields 850ml, to serve 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

To prepare the Syrup: Place all the items inside a pot, bring to a gentle boil, stirring so the sugar melts. After that, remove from the stove allowing it to cool entirely. Decant into a clean bottle, seal and refrigerate it chilled, where it will keep for up to a month.

Preparing the Batch Mix: Combine the specified liquid ingredients into a large bottle, allow it to infuse for an hour, then pass it through preferably using muslin, making it fully clarified.

To serve: Add 85ml of the batch mix into a stirring glass containing ice, gently stirring lightly for one minute to chill. Filter into a cold coupe glass or equivalent, top with the cranberries and complete it using a light spray of mandarin oil above the glass.
